Josef and Eva Maria Bauer craft wines in the Grossriedenthal area of Wagram with a deep respect for nature. Their vineyards are farmed without herbicides, pesticides, or chemical fertilizers, using natural ground cover to encourage biodiversity and reflect the region’s terroir.
From 1.5 hectares of vines planted in 1956 and 1970 on drifted loess, the grapes are hand-harvested in early October, carefully sorted, and destemmed. After a two-month maceration in stainless steel, the wine ferments with native yeasts over eight weeks at controlled temperatures. It then rests on its lees until January without stirring and ages for five months in stainless steel before being bottled unfiltered.
